Our main course was Paula's Chicken Empanadas. Soooo so good! The recipe calls for jalapenos, but we left those out.. a little too hot for our liking! They were simply delicious though! And, fun to make. We paired the empanadas with wild rice, mixed in some sweet corn, and had salsa and low-fat (what's the point?!?) sour cream. Click here for the recipe!
And of course no Paula Deen dinner is complete without a Paula Deen dessert. Enter Paula's Loaded Oatmeal Cookies :o) You can bet we used more butter than I'd like to remember, but these cookies are amazing! We made the cookies a little bigger than the recipe calls for, and for these cookies.. bigger is better! So, so good!
