Pumpkin Heaven :-)

I made 3 loaves of this last night, and let me tell you.. this is Fall baking HEAVEN! This bread is soooo good! And, since the recipe makes 3 whole loaves, its a perfect gift for family or friends AND yourself! If you like to bake, or even if you don't, this easy recipe will get you some of this...



Chocolate Chip Pumpkin Bread

Prep Time - 30 Minutes
Cook Time - 1 Hour 10 Minutes
Makes 3 whole loafs in 9 x 5 inch loaf pans

Ingredients-
3 cups white sugar
1 (15 ounce) can of pumpkin puree
1 cup vegetable oil
2/3 cup of water
4 eggs
3 1/2 cups all purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
2 teaspoons baking soda
1 1/2 teaspoons salt
1 cup (I used the whole bag!) miniature (I used reg. size!) semisweet chocolate chips
1/2 cup chopped walnuts (optional.. I used them)

Directions-
1. Preheat oven to 350 degrees F. Grease and flour three 9 x 5 inch loaf pans.
2. In a large bowl, combine sugar, pumpkin, oil, water, and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips and nuts.
3. Bake for about an hour to an hour and fifteen minutes. An inserted knife should come out clean. Cool on wire racks before removing from cans or pans.

*I baked mine for about an hour and 10 minutes. It will range depending on your oven. I also let mine cool, wrapped them in foil, and am keeping them in the refrigerator. The bread is sooo yummy and moist when its cold :-)
