Easy As Lasagna

I discovered a new, suuuper easy recipe last night. I literally threw it together with some ingredients we had and it turned out so delicious...

Mexican Lasagna

Ingredients:

1 lb ground turkey (or beef)
8 Medium soft tortilla shells
1 can (15 oz) fat free refried beans
1 can (15 oz) Hormel Chili (with or without beans)
Shredded Cheddar Cheese
Shredded Mozzarella Cheese
Fat-free or low-fat sour cream
1 packet of taco seasoning

Preheat over to 350 degrees.

Brown 1 lb ground turkey in a skillet. Drain, then add 2/3 cup of water and taco seasoning. Mix in the skillet over medium heat for about 5-6 minutes.

Grease a 2 quart (8 x 10) glass casseroll dish. Line bottom of dish with 4 tortilla shells. Using entire can, spread layer of refried beans over shells. Sprinkle about 2 hand fulls of cheddar cheese over beans. Lay 2 more tortillas on top of cheese, side by side. Spread entire can of chili over tortillas, followed by a layer of mozzarella. Place two more tortillas atop cheese (side by side). Spread a layer of sour cream over these tortillas. Then pile on the taco seasoned ground turkey and spread evenly. Do one more generous sprinkling of chedder cheese, atop the meat.

Place in oven and let bake for 20 minutes. Let stand 5-10 minutes before serving. Serve with salsa or taco sauce.

So, so yummy and a great substitute for plain old tacos. It should make 8 servings, depending who's eating. 26 year old fiances seem to need/want 2 servings :o)
