Sauteing while I pray that I'm doing this right. But as soon as the sweet smell of lemon, butter, and cooking sherry mixed with the fish, we knew we could do no wrong! L said it smelled like kettle corn :-)
Here is the finished product with some jasmine rice and steamed asparagus. You can't see a whole lot of the fish, but you get the picture. And, like I said, I improv'd on the presentation! I'm still a fish-beginner!

You all should try this one if you're interested in making your own fabulously yummy fish dish! Here is her story and directions...
"Country and I live off of seafood....we eat nothing but when we're down in the keys at his house. We caught a bunch of snapper the other weekend and I cooked it the same way our favorite restaurant does... If you can't get your hands on snapper, any light white flaky fish will do- Tilapia is really easy to find. Give the fish a light covering of egg and flour..you don't want a thick breading. In a sautee pan over medium heat melt a bunch of butter- maybe half a stick, squeeze in a few lemons, and pour in about 1/4 cup of cooking sherry. Taste it with your finger until you get a combination that you like...lay the pieces of fish in the pan and don't touch it! Give it a few minutes and when you lightly touch the fish and it flakes apart, flip it over! Give it another minute or two and you're done! It's delicious served with rice- we like Jasmine Rice."
