Thanks for the chicken recipes girls! They all sound delicious so we're going to try all of them! :o) Not all this week of course, but they will be added to our "recipes to try!"

Now, to return the favor, I'll share a super easy, "semi-homemade" recipe that I created last week and L loved it so much that I'm making it again tonight before he leaves for his *last midnight shift* of this rotation! (Yay!) Its a super easy, quick, chili recipe that you and the man in your life will love! Just call me Emma-Lee! (get it? Semi-homemade with Sandra-Lee?.. I know, I'm a dork.)

Cheesy Chili & Cornbread


What you will need:

1 recipe for cornbread or Jiffy cornbread mix (so good!)

1 lb ground turkey (or ground beef if you prefer)
1 can (15 oz.) of Hormel chili with beans
1 small can of organic diced tomatos or a cup of quartered cherry tomatos
A hand-full of shredded mozzarella
A hand-full of shredded cheddar
Olive Oil
Salt & Pepper

Prepare Corn Bread and put into oven before beginning chili.

Brown ground turkey over medium-high heat in olive oil coated skillet.

Once browned, turn down heat add 1 can of Hormel chili to skillet. Mix in evenly and let cook together for about a minute. Add diced tomatos to mix. Mix evenly. Add salt and pepper to taste at this point as well.

Spread mixture out evenly over the skillet. Sprinkle shredded mozzarella evenly over top. Do the same with cheddar. Mix together evenly, as cheese melts into the chili.

Annnnd, that's it! The corn bread should be finished baking right around the same time, and viola! you have a hot, hearty, semi-homemade, DELICIOUS, meal. It is so good! :o)
