Happy Wednesday everyone! I am still being very neglectful of my dear ol' blog. I'm planning to get back into the swing of things soon but right now I'm busy, busy!

I wanted to be sure to share something good though for Healthy Wife, Healthy Life Wednesday, though! Its a recipe I came across today while on my lunch break at work. It looks and sounds soooo so good, and its healthy too! Here it is:

Black Bean and Sweet Potato Chili
Makes 11 cups


Ingredients:
2 tablespoons extra-virgin olive oil
1 medium red onion, chopped
1 red pepper, seeds removed and chopped
4 cloves garlic, minced
2 tsp. salt
1 1/4 cups cubed sweet potato
1 can (28 oz) diced tomatoes
4 cans (15 oz) black beans
1 jalapeno chili pepper, seeded and diced
1 tablespoon cumin
1 tablespoon chili powder
1 teaspoon unsweetened cocoa powder
1 lime, cut into wedges
1 cup chopped cilantro leaves, washed and dried
Juice and zest of 1 lime

Directions:
  1. Warm the oil in a large pan over medium heat and add the onion, red pepper, garlic, and salt. Saute until soft, about 5 minutes.
  2. Add sweet potato, lime zest and juice. Cook for 12 more minutes, stirring occasionally.
  3. Add the remaining ingredients, except for the lime wedges and cilantro. Stir well, bring to a simmer, cover and cook for 20 minutes.
  4. Serve with cornbread or over brown rice. Top with fresh cilantro and a lime wedge.
